Is it just me or just here?

About a year ago I quit buying pork chops. We liked them, but the price was getting higher, and the meat was getting progressively tougher. If I cooked it until the pink just left, we had shoe leather, if I stopped before that, my family would not eat it. Lately I found a great recipe for pork chops, and tried again. Same problem.

Is this just a problem out here in California, or is pork just getting leaner everywhere and therefore tougher.

I have to confess, with the price of meat being what it is, I think I am done with pork chops. Am I the only one?

Are pork roasts just as bad?

We don't eat pork so I have no idea how the prices on pork might be here in WA, but I have been *stunned* by the price increases in other meats/poultry. Buying a quarter cow or lamb & ordering chickens directly from the farmer are the *same price* as the ever rising grocery store meat where I live! Same goes with milk and eggs a good portion of the time. I could hardly believe some of the grocery prices out this way. Whenever I call my parents down in GA, it seems their price increases aren't quite as bad as those of us on the West Coast. *sigh*

Y'all might want to check out localharvest.org and see what meat might be offered by farmers in your area and how the prices compare to what you are paying now. Also see if any butchers in your area might offer "family pack" deals on assortments of meat. We used to get a family pack of meat in VA, before we managed to get into a cow share and found the prices to quite decent, compared to the grocery store.

I must confess that I'm more than a little anxious to see how high these prices are going to rise :o(

We hardly eat any meat except chicken, it's so expensive! Actually, when I stopped eating meat regularly, I noticed that whenever we eat pork, we have really bad breath! When I think of that, I don't miss it as much. You might try cooking it in the crockpot? A friend of mine puts pork chops in the crockpot with a can of chicken and rice soup and they're amazing!
